At High Peaks Kitchen, every dish was crafted with intention. Our menu blended traditional Indian recipes with the fresh, vibrant ingredients of the Bay Area. While every item had its fans, a few dishes rose above the rest to become the signatures that defined our kitchen.
Here are the dishes that our guests loved most — and the stories behind them.
Prawn Biryani
Our most celebrated dish. Layers of fragrant basmati rice, plump prawns marinated in a blend of saffron and cardamom, slow-cooked until every grain absorbed the rich, aromatic flavors. Topped with crispy fried onions and fresh cilantro, this biryani was a weekend ritual for many of our regulars. The secret was in the dum cooking method — sealing the pot with dough to trap every wisp of steam and flavor inside.
Chicken Tikka Masala
A dish that needs no introduction, but ours had a twist. We marinated the chicken overnight in yogurt and a proprietary spice blend that included smoked paprika and fenugreek. The tikka pieces were charred in our tandoor oven before being folded into a creamy, tomato-based sauce enriched with cashew cream. Rich, smoky, and utterly satisfying — it was comfort food at its finest.
Fish Karahi
Inspired by the street food stalls of Karachi, our Fish Karahi featured fresh Pacific fish simmered in a wok-like karahi with tomatoes, ginger, green chilies, and a finishing touch of fresh fenugreek leaves. It was bold, bright, and unlike anything else on the menu. The dish arrived still sizzling, the aromas rising in waves that made the whole dining room pause.
Lamb Rogan Josh
A Kashmiri classic that we prepared the traditional way — with dried Kashmiri chilies that give the dish its signature deep red color without overwhelming heat. Tender lamb shoulder, braised low and slow with whole spices, yogurt, and a hint of asafoetida. The result was a stew so tender and fragrant that it practically melted on the tongue. Best enjoyed with our fresh-baked garlic naan.
The Philosophy Behind Our Menu
What made these dishes special wasn't just the recipes — it was the approach. Every morning, our kitchen team ground whole spices fresh. Garam masala, chaat masala, tandoori spice blends — nothing came from a jar. We sourced produce from local Oakland farmers whenever possible, and our meats were always halal and ethically raised.
Good food takes time. There are no shortcuts worth taking in the kitchen.
